Blueberry Filling/Topping
Gently combine 380 g pre-rinsed blueberries, 3 Tablespoons granulated sugar, 2 Tablespoons cornstarch, 1/4 teaspoon salt, zest of 1 lemon and half its juice, –pause, inhale, don’t you just love it– stir in a Tablespoon of butter. Bake in your choice of container by itself at 225C for 20 minutes, or longer if you’re baking as a galette following your favorite dough recipe.
